The Dairy Hill block is one of the best Semillon vineyards in the Hunter Valley, consistently producing low yields of concentrated fruit. This was particularly
so in 2017 – a standout year for the Hunter.
In the winery: Following inoculation with a selected white wine yeast, the wine was fermented at 12-15ºC for 15 days.
In the glass: Fine straw with a green hue.
On the nose: Bright lime juice, lemon, cut grass and lime zest perfume.
On the palate: Lime juice and a touch of fennel provide a racy, ripe and positive fruit core with textbook quinine-like varietal hints adding to the juicy mouth-feel.
