Ingredients
1 ripe peach
1 ball buffalo mozzarella
2 basil leaves
1 tbsp chives
Ginger vinaigrette
100g microplaned ginger
100ml chardonnay vinegar
50ml lemon juice
10ml soy sauce
100ml extra virgin olive oil
Method
1. Slice peach and mozzarella, spread over plate with basil and chives, season. Dress with tablespoon of vinaigrette.
