Add onions and potatoes. Cook covered, over a medium heat for 8–10 minutes, stirring occasionally, until potatoes are just tender. Add spinach and stir until wilted. Top with crumbled King Island Dairy Bass Strait Blue. Combine remaining ingredients and pour over potato mixture. Cover pan with lid or foil and cook over a low heat for 20–25 minutes until frittata is set in the middle. Place under grill for 3-5 minutes to brown the top. Cut into wedges to serve with a green salad.
