Individual Lindt Chocolate Tarts

INGREDIENTS

  • 12 short crust tart cases
  • 875ml cream
  • 65g sugar
  • 375g Lindt Excellence 70% Cocoa Chocolate
  • 4 egg yolks
  • 1 egg
  • Pinch salt

METHOD

  1. Preheat oven to 140°C or 120°C fan forced
  2. Mix together cream and sugar in a saucepan, bring to the boil over a moderate heat, then mix in chocolate and stir until dissolved.
  3. Break eggs into a separate clean bowl and whisk. Pour chocolate mixture into eggs and add pinch of salt. Mix well then pour into short crust tarts and bake for 30 minutes or until just set in the centre.
  4. Serve with King Island thick double cream.
