Lyndey Milan’s fennel and radicchio salad with lemon vinaigrette

INGREDIENTS

  • 1 radicchio
  • 1 baby cos lettuce
  • 1 small frisee (endive)
  • 2 baby fennel bulbs, thinly sliced
  • ½ bunch chives, snipped

Lemon or lime vinaigrette

  • 1/3 cup (80ml) olive oil
  • 1½ tbsp (30ml) lemon or lime juice
  • 1 tsp Dijon mustard
  • 1 garlic clove, crushed
  • ½ tsp sugar
  • ¼ tsp sesame oil

METHOD

  1. Combine vinaigrette ingredients in a screw top jar and shake well.
  2. Wash and dry salad ingredients, separating leaves. Tear into a large bowl with fennel and chives.
  3. Just before serving, toss with vinaigrette.
