Life All Travel Destinations Entertaining Food All Chefs Recipes Restaurants Wine Pairing Food News Wine All Wine 101 Wine News Wine Regions Wine Varietals Wineries Home > Selector Magazine > Food > Portuguese paella Food Portuguese paella Preparation time Cooking time Serves 4 Ingredients 2 tbsp olive oil 4 chicken cutlets 2 Portuguese chorizo, sliced 1 medium red onion, finely sliced 4 garlic cloves, finely chopped 2 Birdseye chillies, finely chopped ½ cup sherry 1 litre chicken consommé 1½ cups paella rice 1 lemon, rind and juice 2 tsp smoked paprika 1 jar sweet peppers, chopped 8 large green prawns, peeled tails intact 400g mussels, cleaned and debearded ½ cup flat leaf parsley Method Heat olive oil in a large frying pan over medium heat. Add chicken pieces and brown all over. Remove from pan. Set aside. Add chorizo to pan, stir until golden then add to chicken pieces. Reduce heat to medium low, add onion, garlic and chillies to pan and sauté for 5–8 minutes until soft. Add sherry and cook for 2–3 minutes or until slightly reduced. Add stock and bring to the boil, then reduce heat to low, add rice, chicken and chorizo back to the pan with peppers. Reduce heat to low and cook covered for 20 minutes. Add prawns and mussels and cook covered for 5–8 minutes or until prawns are cooked and mussels have opened. Remove from heat and garnish with parsley and serve with lemon wedges. Note: Any chorizo sausage can be used.
