Cook until garlic turns very light brown. Add crab meat and stir until crab turns white and separates. Mix egg white and rice wine together, add into the side of the pan. Mix as you would for scrambled eggs. Sprinkle a little salt and pepper seasoning onto crab mixture and toss through. Add more seasoning to taste. Serve on plate with spring onion slices and cracked pepper on top.
