Hilltops cabernet
The Hilltops is located an hour's drive north-west of Canberra and is a region Cabernet Sauvignon is particularly well suited to, producing robust wines with distinct berry fruit signatures and firm tannin structures. Modern winemaking techniques allow for control of tannin extraction and emphasise the fruit aromas and flavours. Maturation for 12 to 15 months in mostly one- to two-year French oak barriques adds delicious oak flavour to the wine and helps soften the fruit tannins.
Hilltops Cabernet Sauvignon 2016
A Gold Medal winner at the 2018 Sydney Royal Wine Show, this Cabernet shows deep red colours with a potent aroma of varietal blackcurrant, black olive, clove and nutmeg. The palate is very muscular whilst holding austere and noble tannins providing a long, balanced and integrated finish. Don’t be afraid to keep this wine in the cellar for up to 5 years and be rewarded with earthy, cigar box-aged Cabernet characters that are worth the wait.
