The native flavours and citrussy acidity of Mindy Woods' delicious and easy to prep grilled halloumi dish are well-matched with a Sauvignon Blanc.
 

INGREDIENTS

200g goat’s milk halloumi, cut into thick slices 

2 lemon slices 

Juice of 1 lemon 

2 tbsp macadamia or olive oil 

1 sprig of native thyme, leaves picked 

2 tbsp bush honey 

1 tsp salt flakes 

1 tsp ground pepper leaves 

METHOD

1. Pre-heat your oven grill to high. Lay the halloumi in an oven-proof skillet or heavy-based frying pan and top with the lemon slices. In a small jug or jar, combine the remaining ingredients and pour the mixture over the halloumi. Cook under the grill for 10–15 minutes, until the halloumi is warmed through and golden brown, and the cooking juices are bubbling. Serve immediately.
