Stir fried chicken with black bean

Ingredients

  • 2 chicken breasts, sliced
  • 2 tbsp extra virgin olive oil
  • ½ cup Lee Kum Kee Panda Brand Oyster Sauce
  • 1 bunch brocollini, sliced
  • 1 red capsicum, sliced
  • 2 spring onions, sliced
  • ½ cup Lee Kum Kee Black Bean Garlic Sauce
  • 3 tbsp Lee Kum Kee Premium Soy Sauce
  • 200g rice noodles, cooked to serve

METHOD

  • Combine the sliced chicken, 1 tablespoon of oil and oyster sauce in a non-metallic bowl and marinate well (up to 24 hours).
  • Heat remaining oil in a wok over a medium–high heat for 2 minutes and stir fry the brocollini, capsicum and spring onions for 1–2 minutes. Remove, set aside.
  • Return the wok to the heat and stir-fry the chicken for 3–4 minutes.
  • Return the vegetables to the wok and spoon in the black bean sauce and stir-fry 3–4 minutes. Season with soy sauce and serve hot over cooked rice noodles.

Notes: Chicken maybe replaced with sliced lamb or beef.
