First recorded in use during the Chinese Qin Dynasty, clay cookers with removable domed lids were a staple across Asia for over 3,000 years thanks to their ease of use when cooking rice, in small pots hung in the inside of the dome. Arriving in Japan from China via Korea, they became known as mushikamado, or “movable stoves”, and by this time had long been used for grilling and roasting meats thanks to the insertion of a slatted grid. During the Second World War, such cookers caught the eye of American serviceman and entrepreneuer Ed Fisher, who was amazed by the flavours of food cooked in kamado cookers and began importing them back to the United States.
While these original clay cookers produced great results, they were relatively fragile, especially after exposure to the elements. Based on materials first developed by NASA for the space program, Ed refined and improved upon their material design, making them not only more durable, but also improving their heat insulation qualities. Thus was born the modern Big Green Egg, which has today become one of the most popular outdoor cookers in the world, celebrated for its versatility and ease of use.
