Indulge in these Sydney rock oysters with ginger and shallot dressing. Oysters are great paired with one of our handpicked Sparkling wines. 

INGREDIENTS

24 Sydney rock oysters

2 tbsp Mirin

2 tbsp sherry vinegar

1 tsp finely chopped Thai red shallots

1 tsp finely chopped ginger

METHOD

1. Mix all the ingredients together except the oysters and place into a dipping sauce bowl.

2. Serve the oysters over crushed ice. Garnish with rose petals, watercress and lemon wedges.
